Coral Fungus: The Poster Child for Unappreciated Wild Mushrooms

WE LOVE CORAL FUNGUS!!! Chanterelle lovers will also love these delicate mushrooms. There are not a lot of great recipe ideas out there, so here are some of ours.

• Coral mushrooms are the best with scrambled eggs. No slimy texture, just pure flavor. Add your favorite ingredients like onions, peppers, ham, and cheese.
• Place the sliced mushrooms in a pot of chicken stock for a light simmer. Once the mushrooms have soaked up most of the broth, sautee with butter, garlic, and a nice white wine. Absolutely gourmet.
